Pink Raspberry & Coconut Porridge (VG + GF)

Raspberries are super rich in vitamins, antioxidants, and fiber. They are an excellent source of vitamin C, manganese and dietary fiber.

Anthocyanins found in raspberries is an antioxidant associated with lowering blood pressure, boosting the health of the heart and cardiovascular system, and protecting against diabetes.


Makes: 1 bowl

Preparation time: 15 min


INGREDIENTS:

  • 400 ml coconut milk

  • 80g oats

  • 100g fresh raspberries

  • 30g desiccated coconut

  • 1tbsp coconut sugar

  • 1 vanilla bean


+ any toppings of your choice


My choice:

  • more raspberries

  • coconut shavings

  • 86% dark vegan chocolate

  • coconut chocolate yogurt from HARVES MOON

  • coconut almond butter from PURE NUTS

LET's DO THIS

Pour the coconut milk into a pot and gently bring it to boil.


Add the oats, raspberries, desiccated coconut, vanilla and coconut sugar to the milk. Reduce the heat and allow to simmer for 5 minutes, stir frequently using the whisker to mash the raspberries.


Once the porridge has thickened it is ready, divide the porridge into 2 bowls.


To serve - decorate with any toppings you wish. I topped mine with the coconut shavings, more raspberries, dark chocolate and chocolate chips, choko coconut yogurt and coconut-almond butter.

Are a good source of copper, vitamin K, biotin, vitamin E, magnesium, folate, omega-3 fatty acids and potassium. They have a high concentration of ellagic acid (a compound that prevents cancer), hence can help in stopping the growth of cancer cells and eliminating their progression.


OATS

Are an incredible grain! They are loaded with dietary fiber (containing more than many other grains) and have a range of healthy cholesterol-lowering properties. They also lower blood pressure, improve health, help reduce hunger and increase feelings of fullness, and can reduce constipation.
